Each morning at Scottwood, you'll be awakened with delightful aromas from the kitchen.

You will enjoy eating in the main dining room or outside on the patio, ( overlooking the South Elkhorn Creek ) when the weather is just right.

Below are a couple of our favorite recipes...

Annettes Homemade Granola

  • 4 cups oats
  • 2 cups wheat germ
  • 1/3 cupsesame seeds
  • 2 cups coconut
  • 1 cup chopped pecans
  • 1 1/2 cups raisins or craisins
  • 1 cup chopped dates
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1 teaspoon salt
  • 1/2 cup water
  • 3/4 cup light molasses
  • 1/2 cup oil
  • 1 teaspoon vanilla extract (1 use Mexican vanilla extract)

Combine first 11 ingredients. Mix liquids and pour over cerel mixture. Mix well. Spread in a large pan and bake at 300 degrees fro 40 to 50 minutes, stirring occasionally. Store in an airtight container.

Note: In addition to the above items, I sometimes go to the health food store and choose other nuts, such as almonds, and other ingredients in the bulk food area to add variety to the mixtures.  it is just as good as is, and is healthy too!


Grand Morning Glory Croissants

  • 6 croissants
  • 1 cup cranberry-ornage marmalade
  • 1/4 cup plus 1 teaspoon ornage juice
  • 5 eggs
  • 1 cup heavy cream
  • 1 teaspoon Grand Marnier liqueur
  • Fresh fruit for garnish

Slice croissants in half. Place bottom half in buttered 9 x 13-inch baking pan. Mix marmalade and orange juice. Put 2 tablespoons aside and spoon remaining mixture over each croissant. Beat eggs, cream, and liqueur until mixed. Place the top portion on each croissant. Gently pour egg/cream mixture over croisssants and top with remaining 2 tablesppons of marmelade/orange juice mixture. Cover with plastic wrap and store in refrigerator overnight. Remove from refrigerator 30 minutes prior to placing in oven. Bake at 350 degrees for 25 minutes. Remove from oven and serve immediately. Garnish with fresh fruit, if desired. Serve with bacon and hash browns.
